Chicken Fajitas

This is a favorite dinner of Ryan's and mine. It's quick, easy, cheap, and tastes great! The nice thing about this recipe is, you can adjust it to feed any number of people you have. You can also freeze the chicken and use it at a later time.

Chicken Fajitas
10-12 skinless, boneless chicken tenders
1 pkg. taco seasoning
Optional: onion & green pepper, cut into rings
6 flour tortillas

Pour some oil into a frying pan and add chicken tenders. Using a spatula, chop chicken into pieces as it cooks. Add onion and green pepper, if using, when the chicken is almost done. When chicken is no longer pink, remove from pan and drain really well. Put chicken back into pan and add taco seasoning and water (according to directions on package). Cook until all water has evaporated. Warm tortillas according to package and scoop chicken into tortilla.

I like onions and sour cream on mine while Ryan just likes cheese on his. You can add any toppings that you like. We usually get 6 good sized fajitas from this recipe. You could get more than 6 if you use less chicken in each one.
