I got this recipe from my MIL and it has turned out to be one of my favorite treats! Very easy to make and tastes great!! This is a great dessert item to take to a "pot luck" dinner.
Pistachio Pineapple Delight
1 pkg. pistachio instant pudding
8 oz. tub Cool Whip, thawed
14.5 oz can crushed pineapple
1 c. mini marshmallows
Mix dry pudding mix and Cool Whip together well. Add pineapple and marshmallows. Chill. Stir before serving. Store in fridge.

My recipe suggests adding extra nuts (either pistachio or walnuts...ground/chopped) and using colored marshmallows which makes it more colorful. A friend of mine's 6 year old helped me make it for his family and enjoyed every minute of doing so.
