Blueberry Streusel Coffee Cake

If you like blueberries, I have a treat for you! This is one of my coffee cakes I am selling at the Farmer's market. Very easy to make!

Blueberry Streusel Coffee Cake

2 c. All Purpose flour
1 c. sugar
2 tsp. baking powder
1 tsp. salt
1 stick margarine, softened
1 c. milk
2 eggs
1 tsp. vanilla
1 pint fresh blueberries

Streusel:
1/2 c. b. sugar
1/2 c. flour
1/2 stick margarine

Mix all cake ingredients in a bowl except blueberries. In a separate bowl, mix streusel ingredients. Oil and flour a 10" tube pan. Pour half of cake batter in pan. Add blueberries. Pour remaining batter on top. Sprinkle streusel topping on top of cake. Bake at 350* for 45-50 minutes. When cool, turn onto cooling rack, then onto serving plate.

That looks so good. We have a couple of blueberry bushes and have been picking them and putting them in the freezer. My son loves blueberry pancakes and I put them in my oatmeal. I will save this recipe.

can you replace the margarine for regular butter?

I wouldn't see why you couldn't use regular butter. I just always buy the cheap stuff when I am baking. You might want to watch the salt. I am not sure how it compares.

i will watch for the salt. hopefully, i have some unsalted butter in the freezer.
i am so craving this cake since i saw the picture that i went to the store and got blueberries.
BTW... a stupid question.
does it have to be bake in a tube pan(i dont have one)? or can i use a round one or even a 9x13?
